[Design] Format of replies and forwards

I've got a few features that I'd like but can't find in my current client
(MS Outlook) and haven't heard mention of elsewhere--I thought I'd throw
them into the pot:

Firstly, one feature that I would like to see in a mail client is the option
to choose what headers to include from an email I am forwarding or replying
to. I don't use IM for a variety of reasons so email conversations become
cumbersome very quickly due to the 'baggage' that is typically included,
e.g:

  > Cc: Her Best Mate

I imagine that the choice of headers to include when replying or forwarding
has been made via some RFC or another in the early days of email?
Nevertheless, I would like to be able to configure my mail client to
simplify these headers, for example:

  > -----Original Message-----
  > From: Ann E User
  > 

This makes it far easier to read a 'quoted' conversation that has spanned
more than a couple of emails. There are also reasons other than plain
neatness for this as well--when I forward an email I may not want
information such as the original sender's email address to be included or
the list of original recipients; this protects their privacy, a courtesy I
wish others would extend to me when forwarding my emails to all and sundry.

Secondly, I find the ability to swich off signatures for replies and
forwards similarly useful in keeping email conversations legible and
efficient.

Thirdly, I am frequently sent emails that are difficult to read since they
include lines that have been broken and prefixed with different depths of
angled brackets, '>'. Email is used to communicate and stuttering of this
sort is avoidable. Can we have a "clean email" button that strips this
rubbish out and renders the paragraphs correctly?

I use a program called "emailstripper"

imagine that this would be too difficult to build in to Chandler?
