two possibilities for ubuntu gcc selection..

1) gcc -V 3.4 ... the manpage says
       -V version
           The argument version specifies which version of GCC to run.  This
           is useful when multiple versions are installed.  For example,
verâ
           sion might be 2.0, meaning to run GCC version 2.0.

no idea if this works for gcj or what

2) maybe use debian's update-alternatives system, thats a wild guess though
